Nobody will guess that these brownies are made from black beans; they’re likely to impress any chocolate lover. Black beans add a fudgy consistency that resembles that of a feel-good brownie dessert. Fiber-rich black beans are sweetened with potassium-rich dates, melted antioxidant-rich dark chocolate, and copper-rich peanuts. These ingredients come together to form a moist, soft, delicious brownie.
1 (15-ounce) can low-sodium black beans, drained and rinsed
6 small dates, halved
1½ ounces (about half a bar) 70-percent dark chocolate bar, quartered
2 tablespoons quick-cooking oats
2 tablespoons unsalted raw peanut butter

Preheat the oven to 350°F.

In a medium bowl for a food processor, combine the black beans, dates, chocolate, oats, peanut butter, and water. Blend until very smooth and doughy, 2 to 3 minutes.

Pour the batter to an 8-inch square baking pan and spread evenly. Cook for about 15 minutes until the top turns a darker brown, is cracked, and a fork comes out clean when inserted in the middle.

Let cool for at least 5 minutes before cutting into 6 squares. Store in an airtight container for up to 3 days on the counter.
FLAVOR TIP:
To add a nice crunch to the brownies, stir 2 tablespoons of chopped walnuts or peanuts into the batter before you cook it.
