Ground sesame seeds are the base of this delicious dressing. With an added touch of olive oil, a splash of citrus, a note of peppery, well-textured stone-ground mustard, and savory garlic, these ingredients come together to make a versatile dressing and sauce that complements most dishes. It is a staple I highly recommend batch-cooking.
2 tablespoons unsalted tahini
½ tablespoon extra-virgin olive oil
Juice of 1 lemon
1 teaspoon stone-ground mustard seed
2 garlic cloves, minced
¼ teaspoon freshly ground black pepper
1 tablespoon cold water, plus more as needed
In a medium mixing bowl combine the tahini, olive oil, lemon juice, mustard, garlic, pepper, and water and mix well. For a thinner dressing, add more water until the desired consistency is achieved. Store in an airtight container for up to 5 days in the refrigerator.
FLAVOR TIP:
Add 1 teaspoon of maple syrup or honey to add a bit of sweetness to balance out the tangy, savory notes.
