SERVES 1
2 slices of bread
3 bacon rashers
1 tbsp mayonnaise
½ avocado, pitted and sliced
1 tomato, sliced
2–3 crisp lettuce leaves
freshly ground black pepper
Preheat the grill to high, then toast the bread on both sides and grill the bacon until crisp. Spread each slice of toast with the mayonnaise, top one slice with avocado and tomato and grind over a little pepper. Top with the bacon and lettuce and finish with the second slice of toast. Serve immediately.
