MARINATED PORK CHOPS WITH ROASTED APPLES, SQUASH & RED ONIONS

SERVES 4

1 tsp ground cumin

1 tsp ground cinnamon

1 tbsp soy sauce

2 tbsp honey

1 tbsp lemon juice

4 pork loin steaks

2 tbsp sunflower oil

1 tbsp balsamic vinegar

320g/11oz red onions, cut into wedges

320g/11oz deseeded squash, cut into chunks

320g/11oz peeled, cored apples, cut into chunks

salt and freshly ground black pepper

Combine the cumin, cinnamon, soy sauce, honey and lemon juice and season with black pepper. Pour the marinade over the pork steaks and turn to coat. Cover and marinate in the fridge for at least 1 hour. Preheat the oven to 200°C/400°F/Gas 6. Whisk together the oil and vinegar. Put the onions, squash and apples in a large baking dish and season well with salt and pepper. Pour the oil and vinegar mixture over the top and toss to coat. Bake in the hot oven for about 30 minutes until the vegetables and apples are tender. About 15 minutes before the end of the cooking time, preheat the grill. Put the pork steaks on the grill rack and grill for about 6 minutes on each side until just cooked through. Serve with the roasted vegetables and apples.
