SUMMER BERRY SEMI-FREDDO

SERVES 4

320g/11oz/2½ cups frozen blackberries

320g/11oz/2 cups frozen blackcurrants

320g/11oz/2½ cups frozen raspberries

320g/11oz/heaped 2 cups frozen strawberries

100g/3½oz/heaped ⅓ cup caster sugar

250ml/9fl oz/1 cup Greek yogurt

Put about half the frozen berries in a bowl, sprinkle over half the sugar and leave to thaw at room temperature. Put the remaining berries into a food processor or blender with the yogurt and remaining sugar and blend until smooth and creamy. Check the sweetness, adding a little more sugar if needed. Scoop the mixture into 4 bowls, spoon the thawed berries over the top and serve immediately.
