These simple glazed carrots make the perfect addition to any weeknight dinner.
1. In an electric pressure cooker, combine the carrots, orange juice, olive oil, and salt.
2. Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE. Use the +/− buttons until the display reads 2 minutes.
3. When the cooker beeps, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes.
4. Remove the lid and using the display panel, press the CANCEL button, then select the SAUTÉ function. Cook, stirring occasionally, allowing the carrots to caramelize, about 5 minutes.
5. Transfer the carrots to a serving dish. Season with additional salt to taste, if desired.
6. Top with walnuts and chives.
