I don’t believe potatoes should be done anywhere but in an electric pressure cooker. You won’t believe how perfectly creamy they are! I’m sure we’ve all experienced Thanksgiving dinners where we’re lassoed to the stove for hours watching an insane amount of potatoes come to boil. Let me help simplify your life and save you some time: Just make them in your pressure cooker!
1. Pour the water into an electric pressure cooker and place a trivet or steamer basket inside.
2. Set the potatoes on the trivet or steamer basket.
3. Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the STEAM function and HIGH PRESSURE. Use the +/− buttons until the display reads 8 minutes.
4. When the cooker beeps, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes.
5. Using a slotted spoon, transfer the potatoes from the cooker to a large bowl. Add the oat milk, ghee, salt, garlic powder, and black pepper. Using a potato masher, mash the potatoes until smooth.
6. Top with chives and serve hot.
