Jamaican Rice and Peas

Rice and peas is a traditional Caribbean dish. The peas referred to here are not green garden peas, but beans—called “peas” in the Caribbean. Creamy and delicious, this pairs really well with the Thai Red Curry because of the coconut milk base.

1. In an electric pressure cooker, combine the rice, beans, coconut milk, onion, green onions, garlic, olive oil, thyme, salt, black pepper, and allspice and stir.

2. Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE. Use the +/− buttons until the display reads 28 minutes.

3. When the cooker beeps, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes.

4. Serve hot.
