The New Standard Cabbage Soup

Here’s our gussied-up version of the old-world cabbage soup that was transformed with fennel in the previous recipe. We’ve again modernized it, this time with apple, orange zest, and cinnamon, all to get more flavor in every bowl, a noble goal.

Unfortunately, you can’t use bagged shredded cabbage here. The strands are so thin, they’ll turn into baby food under pressure. Halve a fresh cabbage, core it, then cut each half into ½-inch-thick slices, which you can then cut crosswise into ½-inch-thick strips.

1 tablespoon vegetable, corn, or canola oil

6 ounces thin-cut strips of pork, turkey, or beef bacon, chopped

1 medium red onion, chopped (1 cup)

1 medium carrot, chopped (½ cup)

1 medium green or red cabbage (about 1½ pounds), cored and thinly sliced into strips

1½ quarts (6 cups) chicken broth

1 medium tart green apple, such as Granny Smith, peeled, cored, and chopped

¼ cup apple cider vinegar

2 tablespoons dark brown sugar

1 tablespoon finely grated orange zest

½ teaspoon grated nutmeg

½ teaspoon ground black pepper

2 bay leaves

One 4-inch cinnamon stick

Press the button for: SAUTÉ

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F

Set the time for: 10 minutes

If necessary, press: START

2. Warm the oil in a 6- or 8-quart cooker for a minute or two. Add the bacon and cook, stirring occasionally, until lightly browned, about 4 minutes. Add the onion and carrot; continue cooking, stirring more often, until the onion begins to soften, about 3 minutes.

3. Stir in the cabbage and cook, stirring all the while, until it begins to wilt, about 2 minutes. Pour in the broth and scrape up any browned bits on the bottom of the pot. Turn off the SAUTÉ function. Stir in the apple, vinegar, brown sugar, orange zest, nutmeg, black pepper, bay leaves, and cinnamon stick until the brown sugar dissolves. Lock the lid onto the pot.

Set the machine for: PRESSURE COOK

Set the level for: MAX

The valve must be:

Set the time for: 20 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: SOUP / BROTH, PRESSURE COOK, or MANUAL

Set the level for: HIGH

The valve must be: Closed

Set the time for: 28 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: SLOW COOK

Set the level for: HIGH

The valve must be: Opened

Set the time for: 4 hours with the KEEP WARM setting off (or on for no more than 3 hours)

If necessary, press: START

5. If you’ve used a pressure-cooking setting, use the quick-release method to bring the pot’s pressure back to normal.

6. Unlatch the lid and open the pot. Find and discard the bay leaves and cinnamon stick. Stir the soup well before serving hot.
