Lima Bean, Kale, and Sausage Soup

6 to 8 servings

Lima beans’ mild, slightly sweet, but still decidedly neutral taste makes them a flavor sponge, picking up the savoriness of whatever’s around them. In this recipe, we’ve paired them with spicy Italian sausage to make a well-stocked soup reminiscent of a Sicilian braise.

1 pound dried lima beans

2 tablespoons olive oil

1 pound spicy pork or turkey Italian sausage links, cut into 1-inch pieces

2 medium yellow onions, chopped (2 cups)

1½ quarts (6 cups) chicken broth

4 fresh oregano sprigs

6 cups packed chopped stemmed kale leaves or 12 ounces bagged chopped kale leaves

1 tablespoon fresh lemon juice

1. Pour the beans into a large bowl, fill the bowl with cool tap water, and set aside overnight, for at least 8 hours or up to 12 hours.

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F

Set the time for: 10 minutes

If necessary, press: START

3. Warm the oil in a 6- or 8-quart cooker for a minute or two. Add the sausage pieces and brown well, stirring occasionally, about 6 minutes. Transfer the pieces to a nearby bowl.

4. Add the onion and cook, stirring often, until softened, about 3 minutes. Pour in the broth and scrape up every speck of browned stuff on the pot’s bottom. Turn off the SAUTÉ function. Drain the beans in a colander set in the sink and add them to the pot along with all the sausage in the bowl and the oregano sprigs. Lock the lid onto the pot.

Set the level for: MAX

Set the time for: 12 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: SOUP / BROTH, PRESSURE COOK, or MANUAL

Set the level for: HIGH

The valve must be: Closed

Set the time for: 15 minutes with the KEEP WARM setting off

If necessary, press: START

6. Use the quick-release method to bring the machine’s pressure back to normal. Unlatch the lid and open the pot. Find and discard the oregano sprigs, then stir in the kale. Lock the lid back onto the pot.

Set the time for: 5 minutes with the KEEP WARM setting off

If necessary, press: START

8. When the machine has finished cooking, turn it off and let the pressure return to normal naturally, about 35 minutes. Unlatch the lid and open the pot. Stir in the lemon juice before serving.
