If you’ve got a winter cold, you need this soup, a mix of ginger and garlic without any pasta in the mix, just spiralized zucchini. The spiciness of the soup is determined by the amount of ginger.
In essence, the chicken is overcooked the first time under pressure to get its bony flavor into the broth and turn the meat luxuriously soft. The second cooking, however, is fast, just until the machine comes to full pressure. Don’t overcook those vegetable noodles! They should provide a textural contrast to the chicken.
Two 1-pound bone-in skinless chicken breasts
1 medium yellow onion, peeled and halved
Up to three 3-inch fresh ginger knobs, peeled and thinly sliced
1 medium head of garlic, any papery outer bits removed, sliced in half through the root end
1 tablespoon black peppercorns
1 teaspoon table salt
8 cups (2 quarts) water
1 pound zucchini, spiralized
1. Place the chicken, onion, ginger, garlic, peppercorns, and salt in a 6- or 8-quart cooker. Pour in the water and lock the lid onto the cooker.

Set the level for: MAX
The valve must be:
Set the time for: 20 minutes with the KEEP WARM setting off
If necessary, press: START
Set the machine for: SOUP / BROTH, PRESSURE COOK, or MANUAL
Set the level for: HIGH
The valve must be: Closed
Set the time for: 30 minutes with the KEEP WARM setting off
If necessary, press: START
3. When the machine has finished cooking, turn it off and let its pressure return to normal naturally, about 35 minutes. Unlatch the lid and open the pot. Transfer the chicken breasts to a large cutting board. Fish out and discard all the other vegetables and aromatics in the pot.
4. Cool the chicken for a couple of minutes, then remove and discard any bones and tough cartilage. Chop the meat into small bits and stir these along with the zucchini noodles into the pot. Lock the lid back onto the cooker.

If necessary, press: START
6. Use the quick-release method to bring the pot’s pressure back to normal. Unlatch the lid and open the pot. Stir well before serving.
