Chicken Mole Verde

As its name indicates, mole verde is a green sauce, made with fresh tomatillos and fresh chiles. We’ve calmed down the fire in this version, although you can bump it up by keeping the seeds in the jalapeño (or even adding another one for good measure). The flavors here are tart and bright, better as a summertime braise than winter comfort food.

1 cup chicken broth

8 ounces fresh tomatillos, husked and chopped

½ cup loosely packed fresh cilantro leaves, chopped

¼ cup pepitas (that is, green pumpkin seeds)

1 medium fresh jalapeño chile, stemmed, halved lengthwise, seeded (if desired), and thinly sliced

2 medium garlic cloves, peeled and minced (2 teaspoons)

1 teaspoon ground cumin

1 teaspoon table salt

Six 10- to 12-ounce skin-off, bone-in chicken thighs (see here for instructions for removing the skin)

1. Mix the broth, tomatillos, cilantro, pepitas, jalapeño, garlic, cumin, and salt in a 6-quart cooker. Nestle the chicken pieces into the sauce, overlapping them as necessary. Lock the lid onto the cooker.

Set the machine for: PRESSURE COOK

Set the level for: MAX

The valve must be:

Set the time for: 13 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: MEAT/STEW, PRESSURE COOK, or MANUAL

Set the level for: HIGH

The valve must be: Closed

Set the time for: 16 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: SLOW COOK

Set the level for: HIGH

The valve must be: Opened

Set the time for: 4 hours with the KEEP WARM setting off (or on for no more than 2 hours)

If necessary, press: START

3. If you’ve used a pressure setting, when the machine has finished cooking, turn it off and lets its pressure return to normal naturally, about 25 minutes.

4. Unlatch and open the lid. Use kitchen tongs to transfer the chicken pieces to a cutting board. Use an immersion blender right in the pot to puree the ingredients into a sauce. Or puree the contents of the pot in a covered blender with the center knob removed from the lid and a clean kitchen towel placed over the opening. Pour the sauce back into the pot.

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F

Set the time for: 15 minutes

If necessary, press: START

6. Bring the sauce to a simmer; then cook, stirring quite often, until reduced to the consistency of marinara, 8 to 10 minutes. Return the chicken pieces to the pot, stir well, and cook for 1 minute. Turn off the SAUTÉ function, remove the hot insert from the pot, and set the lid askew over the insert for 5 minutes to blend the flavors.
