Ground Turkey Stew with Black-Eyed Peas

As a base for this simple stew, you’ll first make a tasty condiment for the braising medium with jarred roasted red peppers, a concoction that’s also a thickener as the stew cooks. Although final dish is a little saucy, we didn’t feel the need to boil it down.

When you buy ground turkey, the package will say what you’re getting: ground turkey breast, ground white meat turkey (usually with no skin and cartilage in the mix), or just ground turkey (which is about everything on the bird and so much fattier). We recommend only the first two in that list for a pressure or slow cooker since the rendered fat has no place to go except right in the sauce.

1 large jarred roasted red bell pepper

6 sun-dried tomatoes packed in oil

¼ cup dry but light red wine, such as Pinot Noir

1 tablespoon mild paprika

½ teaspoon ground cinnamon

½ teaspoon table salt

¼ teaspoon red pepper flakes

2 tablespoons butter

1 pound lean ground turkey

One 15-ounce can black-eyed peas, drained and rinsed (1½ cups)

One 14-ounce can diced tomatoes (1¾ cups)

½ cup chicken broth

2 tablespoons loosely packed fresh dill fronds, finely chopped

1. Put the roasted pepper, sun-dried tomatoes, wine, paprika, cinnamon, salt, and red pepper flakes in a food processor. Cover and pulse to create a coarse but thin sauce, stopping the machine at least once to scrape down the inside.

Press the button for: SAUTÉ

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F

Set the time for: 10 minutes

If necessary, press: START

3. Melt the butter in a 3- or 6-quart cooker. Crumble in the ground turkey and cook, stirring often to break up any clumps, until lightly browned, about 4 minutes. Scrape every bit of the red pepper paste into the cooker and cook, stirring all the while, for 1 minute.

4. Turn off the SAUTÉ function. Stir in the black-eyed peas, tomatoes, broth, and dill until uniform. Lock the lid onto the pot.

Set the level for: MAX

Set the time for: 3 minutes with the KEEP WARM setting off

If necessary, press: START

Set the machine for: MEAT/STEW, PRESSURE COOK, or MANUAL

Set the level for: HIGH

The valve must be: Closed

Set the time for: 5 minutes with the KEEP WARM setting off

If necessary, press: START

6. Use the quick-release method to bring the pot’s pressure back to normal. Unlatch the lid and open the cooker. Stir well before serving.
