Mock Shepherd’s Pie

Why “mock”? Because we put seasoned, shredded potatoes over this ground beef stew to mimic mashed potatoes. The potatoes won’t be fluffy and creamy, but they’ll have a better texture (mashed potatoes under pressure can get gummy). And the potatoes’ starch will thicken the stew below, turning this retro casserole into a one-pot meal.

2 tablespoons olive oil

1 small yellow onion, chopped (½ cup)

1 medium carrot, chopped (½ cup)

1 medium celery rib, thinly sliced (⅓ cup)

1 medium garlic clove, peeled and minced (1 teaspoon)

1 teaspoon dried thyme

1½ pounds lean ground beef

1 cup fresh, shelled or frozen peas (if frozen, do not thaw)

1¼ cup beef or chicken broth

1½ tablespoons tomato paste

1 tablespoon Worcestershire sauce

1½ pounds russet potatoes, peeled and shredded through the large holes of a box grater

1 teaspoon table salt

½ teaspoon onion powder

½ teaspoon ground black pepper

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F

Set the time for: 10 minutes

If necessary, press: START

2. Warm the oil in a 6-quart cooker for a minute or two. Add the onion, carrot, and celery. Cook, stirring occasionally, until the onion softens, about 3 minutes. Stir in the garlic and thyme until aromatic, just a few seconds.

3. Crumble in the ground beef and cook, stirring more often, partly to break up any clumps, until the meat loses its raw, red color, about 3 minutes. Turn off the SAUTÉ function and stir in the peas, broth, tomato paste, and Worcestershire sauce until the tomato paste dissolves, scraping up any browned bits on the pot’s bottom.

4. Toss the shredded potatoes, salt, onion powder, and pepper in a large bowl until uniform. Scatter this mixture evenly over the top of the ground beef mixture. Sprinkle the paprika evenly over the top. Lock the lid onto the pot.

Set the machine for: PRESSURE COOK

Set the level for: MAX

Set the machine for: MEAT/STEW, PRESSURE COOK, or MANUAL

Set the level for: HIGH

The valve must be: Closed

Set the time for: 10 minutes with the KEEP WARM setting off

If necessary, press: START

6. When the machine has finished cooking, turn it off and let its pressure return to normal naturally for 10 minutes. Then use the quick-release method to get rid of any remaining pressure in the pot. Unlatch the lid and open the cooker. Serve by scooping up the potatoes and stew by big spoonfuls and into bowls.
