This recipe uses long-grain brown rice to make a biryani-style casserole, with sweet flavors to match the earthy whole grain and lots of spices for big pops of flavor. Those spices are whole and will soften under pressure. You might not find many spice bits because of the way the pressure acts on them. But warn anyone who won’t appreciate a sudden mouthful to pick out any whole spices found on their plate.
2 tablespoons vegetable, corn, or canola oil
2 medium yellow onions, halved and sliced into thin half-moons
2 teaspoons coriander seeds
1 teaspoon cumin seeds
1 teaspoon table salt
½ teaspoon ground dried turmeric
½ teaspoon ground black pepper
8 green or white cardamom pods, lightly crushed
8 whole cloves
One 4-inch cinnamon stick
1 bay leaf
1½ cups raw long-grain brown rice
2 pounds boneless leg of lamb, any large bits of fat removed, the meat cut into 1-inch pieces

Set it for: MEDIUM, NORMAL, or CUSTOM 300°F
Set the time for: 15 minutes

2. Warm the oil in a 6- or 8-quart cooker for a minute or two. Add the onion and cook, stirring occasionally, until golden yellow, about 8 minutes. Stir in the coriander seeds, cumin seeds, salt, turmeric, pepper, cardamom pods, cloves, cinnamon stick, and bay leaf until aromatic, about 20 seconds. Stir in the rice until the grains are evenly distributed throughout the mix.
3. Stir in the lamb until it’s evenly coated in the spices and rice. Pour in the broth, turn off the SAUTÉ function, and scrape up every speck of browned stuff on the pot’s bottom. Stir well and lock the lid onto the cooker.

5. When the machine has finished cooking, turn it off and let its pressure return to normal naturally, about 25 minutes. Unlatch the lid and open the cooker. Find and discard the cinnamon stick and bay leaf. Stir well before serving.
