In Japanese, shichimi means seven and togarashi means chile. Thus, this Japanese spice mixture contains seven ingredients. Try it Chazuke , Asian-Inspired Fondue , Well-Dressed Cashew Wheels or even simply sprinkled on ever-popular avocado toast and you’ll see why it has become a must-have in my pantry.
YIELD: ¼ cup (32 g)
2 tsp (4 g) red or green Szechuan peppercorn (substitute white peppercorn if Szechuan is unavailable)
2 tsp (2 g) finely ground roasted nori sheet
2 tsp (4 g) dried Valencia orange peel
2 tsp (4 g) Aleppo pepper flakes or other red pepper flakes, or to taste
2 tsp (5 g) roasted black sesame seeds
2 tsp (5 g) roasted white sesame seeds, hemp seeds or poppy seeds
½ tsp garlic powder
Use a mortar and pestle to crush or grind the peppercorn. Add the nori, orange peel, pepper flakes, black and white sesame seeds and garlic powder to the mortar and pestle. Stir to combine, crushing slightly to extract flavors.
Alternatively, use a small food processor to grind the peppercorn. Add the rest of the ingredients and pulse twice to combine. Store in an airtight container at room temperature for up to 2 weeks.
