I call these Richmond Rice Logs after discovering
a street vendor selling these in the busy suburb of Richmond
in Vancouver, which is the heart of a vibrant Chinese community.
Spicy pickled sauerkraut is the Chinese version of sauerkraut
and is great in a stock with noodles or can be enjoyed with
freshly cooked rice. It is rather salty so use with caution and
make sure you give it a rinse to wash off any extra salt.
