18.                      Crispy Potato Skins

Ingredients
        2 Yukon Gold potatoes
        4 bacon strips
        2 green onions, minced
        ¼ cup cheddar cheese, shredded
        1/3 cup sour cream
        ½ teaspoon olive oil
        ¼ teaspoon of sea salt
Directions:
  1. Rinse and scrub the potatoes to clean
  2. Rub with oil and sprinkle with salt
  3. Put them in the cooking basket
  4. Cook for 5 minutes at 400 degrees F
  5. Take a plate and transfer it and crumble into bits
  6. Slice the potatoes into half and scoop out most of the meat
  7. Arrange the potato skin with the skin facing side up in the cooking basket
  8. Spray them with oil
  9. Cook for 3 minutes at 400 degrees F
  10. Then flip the potato skins
  11. Fill each piece with cheese and crumbled bacon
  12. Cooking 2 minutes more
