Ingredients:
        4 Roma tomatoes, seeded and chopped (see Tip)
        3 garlic cloves, sliced
        1 baby eggplant, peeled and chopped
        1 red bell pepper, chopped
        1 yellow bell pepper, chopped
        1 small onion, chopped
        1 teaspoon Italian seasoning
        1 teaspoon olive oil
Directions:
  1. In a medium metal bowl, gently combine the tomatoes, garlic, eggplant, red and yellow bell peppers, onion, Italian seasoning, and olive oil.
  2. Place the bowl in the air fryer. Roast for 12 to 16 minutes, stirring once until the vegetables are tender.
