Grilled Cheese And Greens Sandwiches

Ingredients:

1½ cups chopped mixed greens (kale, chard, collards; see Tip)
•
2 garlic cloves, thinly sliced
•
2 teaspoons olive oil
•
2 slices low-sodium low-fat Swiss cheese
•
4 slices low-sodium whole-wheat bread
•
Olive oil spray, for coating the sandwiches
Directions:

In a 6-by-2-inch pan, mix the greens, garlic, and olive oil. Cook in the air fryer for 4 to 5 minutes, stirring once until the vegetables are tender. Drain, if necessary.

Make 2 sandwiches, dividing half of the greens and 1 slice of Swiss cheese between 2 slices of bread. Lightly spray the outsides of the sandwiches with olive oil spray.

Grill the sandwiches in the air fryer for 6 to 8 minutes, turning with tongs halfway through, until the bread is toasted and the cheese melts.

Cut each sandwich in half to serve.
