Veggie Tuna Melts

Ingredients:

2 low-sodium whole-wheat English muffins, split
•
1 (6-ounce) can chunk light low-sodium tuna, drained
•
1 cup shredded carrot
•
⅓
cup chopped mushrooms
•
2 scallions, white and green parts, sliced
•
⅓
cup nonfat Greek yogurt
•
2 tablespoons low-sodium stone-ground mustard
•
2 slices low-sodium low-fat Swiss cheese, halved
Directions:

Place the English muffin halves in the air fryer basket. Grill for 3 to 4 minutes, or until crisp. Remove from the basket and set aside.

In a medium bowl, thoroughly mix the tuna, carrot, mushrooms, scallions, yogurt, and mustard. Top each half of the muffins with one-fourth of the tuna mixture and a half slice of Swiss cheese.

Grill in the air fryer for 4 to 7 minutes, or until the tuna mixture is hot and the cheese melts and starts to brown.
