42.                      Scrambled Eggs With Broccoli And Spinach

Ingredients:
        2 teaspoons unsalted butter
        1 medium onion, chopped
        1 red bell pepper, chopped
        1 cup small broccoli florets
        ½ teaspoon dried marjoram
        6 egg whites
        2 eggs
        1 cup fresh baby spinach
Directions:
  1. In a 6-by-2-inch pan in the air fryer, heat the butter for 1 minute, or until it melts.
  2. Add the onion, red bell pepper, broccoli, marjoram, and 1 tablespoon of water. Air-fry for 3 to 5 minutes, or until the vegetables are crisp-tender. Drain, if necessary.
  3. Meanwhile, in a medium bowl, beat the egg whites and eggs until frothy.
  4. Add the spinach and eggs to the vegetables in the pan. Air-fry for 8 to 12 minutes, stirring three times during cooking until the eggs are set and fluffy and reach 160°F on a meat thermometer.
