44.                      Grilled Chicken Mini Pizzas

Ingredients:
        2 low-sodium whole-wheat pita bread, split (see Tip)
        ½ cup no-salt-added tomato sauce
        1 garlic clove, minced
        ½ teaspoon dried oregano
        1 cooked shredded chicken breast
        1 cup chopped button mushrooms
        ½ cup chopped red bell pepper
        ½ cup shredded part-skim low-sodium mozzarella cheese
Directions:
  1. Place the pita bread, insides up, on a work surface.
  2. In a small bowl, stir together the tomato sauce, garlic, and oregano. Spread about 2 tablespoons of the sauce over each pita half.
  3. Top each with ¼ cup of shredded chicken, ¼ cup of mushrooms, and 2 tablespoons of red bell pepper. Sprinkle with the mozzarella cheese.
  4. Bake the pizzas for 3 to 6 minutes, or until the cheese melts and starts to brown and the pita bread is crisp.
