Grilled Chicken Mini Pizzas

Ingredients:

2 low-sodium whole-wheat pita bread, split (see Tip)
•
½ cup no-salt-added tomato sauce
•
1 garlic clove, minced
•
½ teaspoon dried oregano
•
1 cooked shredded chicken breast
•
1 cup chopped button mushrooms
•
½ cup chopped red bell pepper
•
½ cup shredded part-skim low-sodium mozzarella cheese
Directions:

Place the pita bread, insides up, on a work surface.

In a small bowl, stir together the tomato sauce, garlic, and oregano. Spread about 2 tablespoons of the sauce over each pita half.

Top each with ¼ cup of shredded chicken, ¼ cup of mushrooms, and 2 tablespoons of red bell pepper. Sprinkle with the mozzarella cheese.

Bake the pizzas for 3 to 6 minutes, or until the cheese melts and starts to brown and the pita bread is crisp.
