45.                      Chicken Croquettes
Preparation Time: 15 minutes
Cooking Time: 7 to 10 minutes
Serving: 8 croquettes
Ingredients:
        2 (5-ounce) cooked chicken breasts, finely chopped (see Tip)
        cup low-fat Greek yogurt
        3 tablespoons minced red onion
        2 celery stalks, minced
        1 garlic clove, minced
        ½ teaspoon dried basil
        2 egg whites, divided
        2 slices low-sodium whole-wheat bread, crumbled
Directions:
  1. In a medium bowl, thoroughly mix the chicken, yogurt, red onion, celery, garlic, basil, and 1 egg white. Form the mixture into 8 ovals and gently press into shape.
  2. In a shallow bowl, beat the remaining egg white until foamy.
  3. Put the bread crumbs on a plate.
  4. Dip the chicken croquettes into the egg white and then into the bread crumbs to coat.
  5. Air-fry the croquettes, in batches, for 7 to 10 minutes, or until the croquettes reach an internal temperature of 160°F on a meat thermometer and their color is golden brown.
