48.                      Cheese & Bacon Cauliflower Soup

Directions:
  1. Chop 1/2 of the cauliflower; grate the other half.
  2. Prepare the other veggies. Set the IP to SAUTÉ.
  3. Add the bacon; cook till crisped and remove.
  4. Add the butter to the pot.
  5. Add the grated cauliflower.
  6. Add the rest of the veggies; sauté for 5 minutes.
  7. Add the cream; stir to mix.
  8. Add the garlic, pepper, salt, and broth.
  9. Set to HIGH PRESSURE for 15 minutes. NPR when the timer beeps; unlock the lid and open. Stir in the cheeses till melted. Add the bacon.
