  1. Set the IP to SAUTE. Add the onion and garlic; sauté for 3 to 4 minutes. Add the tomatoes and bok choy; sauté for 1 to 2 minutes.
  2. Press CANCEL. Stir in the rest of the ingredients, except for the basil. Lock the lid and close the pressure valve.
  3. Set to MANUAL HIGH PRESSURE for 5 minutes. NPR when the timer beeps.
  4. Transfer the veggies to a serving dish. Garnish with basil. Serve with zoodles or shirataki mushrooms.
