Beautifully Colored Veggies

Ingredients:

1 clove garlic, minced

1pound cherry tomatoes

1 yellow onion (small), chopped roughly

1/2 cup feta cheese

3 cups bok choy, chopped roughly

1 cup of water

1 tablespoon basil (fresh), chopped

1/2 cup cream
-
2 tablespoons butter
-
Black pepper (fresh ground) & salt, to taste
Directions:

Set the IP to SAUTE. Add the onion and garlic; sauté for 3 to 4 minutes. Add the tomatoes and bok choy; sauté for 1 to 2 minutes.

Press CANCEL. Stir in the rest of the ingredients, except for the basil. Lock the lid and close the pressure valve.

Set to MANUAL HIGH PRESSURE for 5 minutes. NPR when the timer beeps.

Transfer the veggies to a serving dish. Garnish with basil. Serve with zoodles or shirataki mushrooms.
