  1. Set the IP to SAUTÉ. Add the oil. Once HOT, add the cumin seeds. When the seeds start to splutter, add the ginger, onion, garlic, and green chili; sauté for 2 minutes.
  2. Add the tomato and the spices; stir for 2 minutes. Add the water; scrape the browned bits off the pot. Add the spinach.
  3. Set to MANUAL for 2 minutes. NPR for 5 minutes when the timer beeps and QPR; unlock the lid and open.
  4. Puree the cooked ingredients using an immersion blender or food processor till smooth. Add the garam masala and cottage cheese. Let sit for 5 minutes so the cheese soaks the flavors.
