  1. Slice the pork into 3 thick pieces so they will cook more evenly.
  2. Put all of the ingredients in the IP. Lock the lid and close the pressure valve. Set to HIGH PRESSURE for 15 minutes. NPR for 10 minutes when the timer beeps and QPR; unlock the lid and open.
  3. Carefully transfer the pork to a strainer; let dry for 10 minutes.
  4. Slice each belly piece into 2 long pieces. Transfer to a sheet pan with the fat-side up.
  5. at 400F for 15 minutes or till the fat is crisped.
