Beat eggs in a bowl and lightly season with salt and pepper.

In another bowl put flour and season too.

On a plate place the seasoned panko breadcrumbs.

Make light indentions on the chicken breasts with a sharp knife, making sure that you don’t cut through. Dip the chicken breasts into the seasoned flour. Then dip the flour-coated chicken into the eggs. Finally, dip the flour and egg coated chicken into the plate with the breadcrumbs and lightly press until the breadcrumbs stick to the chicken breasts.

Place the breadcrumb encrusted chicken on a 3-inch rack and
back on the ‘HI’ setting for about 15 to 17 minutes per side.

Season each slice of chicken with Parmesan and continue baking on the ‘HI’ setting for another 2 to 3 minutes, or until the cheese melts.

Put the chicken breasts on serving plates then slather the marinara sauce over them.
