212.                Five Spice Eggplant Fries

Ingredients:
Directions:
  1. Peel the eggplant and cut it in two widthwise. Slice the eggplant into thick matchstick-style slices.
  2. Lay the eggplant out on a towel and sprinkle the pieces with about half the salt. Let the slices sit for at least 5 minutes to allow the salt to pull out some excess moisture.
  3. Lightly brush off the eggplant slices to remove the moisture and extra salt.
  4. Set the air fryer to 390°F.
  5. In a bowl, combine the remaining salt, olive oil, cornstarch, black pepper, and five-spice powder. Mix well.
  6. Toss the eggplant slices in the spiced olive oil mixture, coating them lightly with your hands as necessary.
  7. Place the eggplant slices in the basket of the air fryer.
  8. Cook for 12-15 minutes.
