Sweet Potato Croquettes

Ingredients:

2 cups mashed sweet potatoes

½ cup freshly grated Asiago cheese

1 egg, plus 1 egg yolk

2 tablespoons flour, divided

1 tablespoon fresh thyme, chopped

½ teaspoon nutmeg
-
1 teaspoon salt
-
1 teaspoon black pepper
-
½ cup seasoned bread crumbs
Directions:

Set the air fryer to 390°F.

In a bowl, combine the mashed sweet potatoes, Asiago cheese, egg yolk, 1 tablespoon of the flour, thyme, nutmeg, salt, and black pepper.

Take heaping spoonfuls of the mixture and, using your hands, form golf ball-sized mounds.

Dust each one with the remaining flour.

Lightly beat the remaining egg and coat each croquette with it before rolling it in the seasoned bread crumbs.

Place the croquettes in the air fryer and cook, working in batches if necessary, for 8-9 minutes.

Remove the croquettes from the air fryer and serve with your favorite dipping sauce, if desired.
