Roasted Eggplant

1 eggplant, cut lengthwise into ½-inch thick slices
2 tablespoons olive oil
3 tablespoons balsamic vinegar
½ teaspoon salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
Directions:
Whisk olive oil, balsamic vinegar, salt, garlic powder, and black pepper until fully combined.
Select the Air Fry function on the COSORI Air Fryer Toaster Oven, set time to 20 minutes and temperature to 400°F, then press Start/Cancel to preheat.
Brush balsamic mix on both sides of the eggplant slices then places into the fry basket.
Insert the fry basket at mid-position in the preheated air fryer toaster oven and press Start/Cancel.
Remove when done and serve immediately.
