261.                Sweet Orange Cornmeal Cake

Ingredients:
        1¼ cups orange juice
        cup yellow cornmeal
        ¾ cup white sugar
        1¼ cups all-purpose flour
        ¼ cup safflower oil
        ¼ cup powdered sugar
        1 teaspoon vanilla
        1 teaspoon baking soda
        Cooking spray
Directions:
  1. Grease a 6×6×2 inch baking pan with cooking spray. Set aside.
  2. In a small bowl, mix the safflower oil, cornmeal, flour, sugar, baking soda, vanilla, and 1 cup orange juice.
  3. Spoon the mixture into the prepared pan and place the pan into the air fryer basket.
  4. Put the air fryer lid on and bake in the preheated instant pot at 375ºF for 23 minutes or until the cake is golden brown.
  5. Transfer to wire racks to cool. Make about 20 holes in the baked cake with a toothpick. Set aside.
  6. In a small bowl, whisk the powdered sugar and remaining orange juice. Pour over the cake slowly for a good soak.
