273.                Oats Sandwich Biscuits

Ingredients:
        1 ½ cups plain flour
        3.5 oz. butter
        3 oz. white sugar
        ½ small egg beaten
        ¼ cup desiccated coconut
        ½ cup gluten-free oats
        1/3 oz. white chocolate
        1 teaspoon vanilla essence
Filling:
        3.5 oz. icing sugar
        2 oz. butter
        1/2 teaspoon lemon juice
        1 teaspoon vanilla essence
Direction:
  1. Whisk butter with sugar in an electric mixer until fluffy.
  2. Stir in egg, vanilla essence, coconut, and chocolate, then mix well.
  3. Slow add flour and continue mixing until it forms a cookie dough.
  4. Make medium-sized biscuits out of it, then roll them in the oats to coat.
  5. Place the cookies in the Air Fryer Basket. Cook the cookies in batches to avoid overcrowding.
  6. Set the Air Fryer Basket in the Instant Pot Duo.
  7. Put on the Air Fryer lid and seal it.
  8. Hit the “Air fry Button” and select 18 minutes of cooking time, then press “Start.”
  9. Flip the cookies after 9 minutes, then resume cooking.
  10. Meanwhile, beat butter with icing sugar into a creamy mixture.
  11. Stir in vanilla and lemon juice, then mix well.
  12. Spread a tablespoon of this filling in between two cookies and make a sandwich out of them.
