ROSE GOMME

PREP: 5 MINUTES • COOK: 5 MINUTES • MAKES 2 CUPS

1kg/2lb 3oz/4½ cups sugar

2½ tbsp rosewater

50g/2oz dried rose petals

1 Set a small saucepan over a low heat and add the sugar, rosewater, dried rose petals and 500ml/17fl oz/2 cups water. Stir, then simmer gently, taking care not to boil, until the sugar has fully dissolved. Remove from the heat and let cool completely.

2 Strain and store in an airtight bottle for up to a month.
