6.Steak Sandwich with Fennel Relish

For the fennel relish:

First make the fennel relish. Heat oil in a pan over med heat and add the onion, fennel & garlic. Stir & add onion & fennel start to soften but not brown. Increase the heat, add the sugar & stir constantly for a further 2–3 min, or until starting to brown. Stir in the mustard & vinegar & season generously with salt and pepper. When the liquid is gone, reduce heat slightly & leave the mixture to caramelize & darken around the edges, stirring occasionally, for a further 8–12 min. Cool.
Preheat the barbecue or griddle pan to very hot. Season the steak generously on both sides and sear for 2–3 min on each side or until cooked to your taste. Lay 2 slices of sourdough bread on each of 4 serving plates. Place relish on one piece, top with a steak, aioli (if using) and rocket, season generously, then top with the second slice of bread. Serve immediately.
