Animal Milk?
Do you know any other mammal that drinks milk from other animals, or drinks milk as an adult? We're not saying that it's bad for all of us, but definitely is for some, and if you have any digestive problems it could be worth trying to avoid dairy.
Milk, after wheat, is the most common food intolerance. We are born with a set of enzymes to digest milk, but they only last up to the age of around 4 or 5, then we are not meant to drink milk any more (and especially not other animal's milk). If we have the genetics to produce more of those enzymes we can go on drinking and eating dairy, but not all of us do.
Cow milk is also very altered today, which could partly be the reason why it causes so many digestive problems, just like wheat. Milk that lasts 6 months doesn't make sense. A cow that produces milk with exactly 3% or 1.5% fat doesn't make sense either. It depends on the climate (colder = fatter) and what the animal is fed. And keep in mind that most cows are not fed what they were meant to eat.
If you knew how altered this poor milk is before it reaches your mouth you wouldn't be calling it milk any more. It's treated in many different ways, one of them to give it a longer shelf life, as in the case of UHT (ultra high temperature) milk. Milk is also put through a process to separate the fat from the water, and then the fat is re-added in precise amounts to get skimmed, semi-skimmed or full cream milk. Milk is very sensitive and the molecules are easily deformed in these processes, especially the fats, something that applies to all fat molecules. Thus the process to make milk and other dairy products is nowhere close to being natural, and it's light-years from healthy.
Dr. Jekyll and Mr. Wheat
When humans are tested for food intolerances, wheat comes out number one, followed by dairy. Even if you haven’t been tested, we recommend that you stay away from wheat as much as possible. If it's the wheat as such, or the protein in it called gluten, or whatever else, we don't really know. What we do know is that the wheat of today is considerably altered from the original wheat used several thousand years ago. Any plant form that has developed in nature over millions of years will have become resistant to attacks from bugs, funguses and other threats. Wheat and other crops that have been manipulated in any way by man will most likely be weaker than those that have developed naturally in nature. That's probably why modern wheat requires so much pesticide. Perhaps it's the main reason why most of us are intolerant to it, or at least a clue as to why.
Always eat whole food, just as nature produced it, and if you don’t know how your food is produced, find out. Don't buy juice, make your own with the whole fruit! Don't buy white bread, buy bread made out of only whole flour, or make your own Olive Loaf. Don't buy white rice, buy the wholegrain rice and other grains. Even better, if you combine grains, beans and rice in the same meal, you will have all the protein you need in one place. Notice that in most of our recipes we combine all these different grains.
