SOUPS & MAINS

Prana Soup

 

-1 Leek

-1 small, or ½ big Pumpkin

-Small Peach

-Bay Leaf

-Turmeric

-Coconut mylk

-Curry

-Pinch of Salt & Pepper

 

Toppings

 

-Sunflower Seeds

-Fresh Coriander

-Orange Zest

-Pinch of Sea Salt

 

PROCESS:

-Chop the leek, pumpkin and peach.

-Start by frying the leek in a big pan until soft. Then add the chopped pumpkin, bay leaf, turmeric, curry, salt & pepper.

-Cover with water and bring to a boil until the vegetables are nice and soft. Just at the end add a splash of coconut mylk.

-Blend the soup together, and when serving top it off with sunflower seeds, fresh coriander, orange zest and a pinch of sea salt.
