Goood-Fat Mousse
-2 ripe Avocados
-4tbs of high quality Coco Powder
-4tbs Agave syrup
Marinated Strawberries
-Fresh Strawberries
-Orange Juice from 1 Orange
-Orange Zest
-Basil
PROCESS:
-First marinate the strawberries! Chop them in half and put them in a bowl, add juice from one orange, orange zest and basil. Mix together and set aside.
-In a blender add 2 ripe avocados, coco powder (good quality, the darker the better) agave syrup and blend together. If you have trouble combining it, add some soymylk, but just a tiny bit to help it along. When it’s a smooth mousse, taste to see if you would like it sweeter, or more chocolaty. Taste your way through the recipes; it's very important that you put your own stamp on dishes in terms of spices. Some like things more salty, some less, some more spicy, some less, etc. Like we mention many times at our cooking classes, cooking is about smelling, tasting, feeling and being visually satisfied. After all, the first thing we do is look and smell our food!
-When you are satisfied with your mousse spoon it in glasses, or we sometimes use pretty coffee cups.
-Eat straight away or let cool in the fridge. Serve with the marinated strawberries!
This is a fantastic mousse that can be used for various things such as: fillings for cakes, cookies, icing on cupcakes etc.
A Note on Sugar
If someone were to invent sugar today and try to register it as food, they most likely wouldn't be allowed to, as it violates a main rule; it depletes us of essential nutrients like minerals. However, because it's an "old food," meaning it existed before we made the rules, it can't be taken off the market. Just like table salt.
The impact of a little sugar is not harmful, but the problem is that we eat a lot more than a little. We eat way too much! A 10-year old child has eaten as much sugar as his grandparents did in a whole lifetime!
85% of our sugar intake is from sugar hidden in food, so most of us are not even aware of our eating what is on average about 70kg of sugar per year per person in Europe, and much more in the USA. It's found in bread, cereals, juices, sauces, and even in meat. It has been called the "fuel of cancer" and it's true that where the sugar intake is high the cancer is too.
Now, sugar is also a refined product. When made from sugar cane it's first ground to a mass. Then it's dark brown, almost black from all the good minerals and fiber. From that is extracted all the healthy nutrients like iron and magnesium. What is left is only the sweet sucrose. It's not what nature intended for us to eat, and as such we consider it a toxin.
Sweeteners are not an option either, we're afraid, making most "light" products even worse. They are even more toxic than sugar and no one has lost weight eating what are simply marketing hypes, rather the contrary.
Chemicals are NEVER food!
