Gin and cucumber popsicles
What’s a summer party without some ice-cold gin? Not a party in our books. Homegrown cucumbers have a taste like no other vegie, and combining them with gin on a hot summer’s afternoon is a match made in heaven. These popsicles are so easy yet so fresh, and they will be the talking point of any party.
Makes 8 popsicles
Use
2 tablespoons honey
½ cup (125 ml/4 fl oz) water
3 cucumbers
½ cup (125 ml/4 fl oz) gin
Juice of 2 limes
2 cups (500 ml/17 fl oz) tonic water

Place the honey and water into a small saucepan over low heat. Stir until the honey has dissolved. Set aside to cool. |

Thinly slice two of the cucumbers and add the slices evenly to the popsicle moulds. |

Place the remaining cucumber into a food processor and blend until smooth. Using a sieve, strain the juice into a medium-sized bowl. Gently whisk in the gin, lime juice, tonic water and honey water. Divide the mixture among each popsicle mould, leaving a little space at the top to allow for expansion during the freezing process. |

Freeze for 1–2 hours, then push popsicle sticks into place before returning the popsicles to the freezer for at least 3 hours or ideally overnight. |

By the way, if you want to do a G-rated version for the kiddies, replace the gin and tonic with 2½ cups (625 ml/21½ fl oz) of lemonade.
