Coriander, lime and garlic dressing
This is our go-to salad dressing to accompany any bowl of leafy greens. With a tangy lime flavour, it will jazz up any old salad. The coriander is a must, but if you have an abundance of mint, feel free to add that in, too. And if you want a little extra creaminess, add a spoonful of tahini to the blend.
Makes 2 cups (500 ml/17 fl oz)
Use
2 garlic cloves
55 g (2 oz) coriander (cilantro) leaves and stems, roughly chopped
Juice of 2 limes
3 tablespoons olive oil
2 tablespoons white wine vinegar
½ teaspoon sea salt

Place all the ingredients into a blender or food processor and blend until smooth. |

Pour the dressing into a sterilised jar and keep it in the fridge for up to 3 weeks. |
Feel free to serve the dressing in a dipping ramekin alongside torn pieces of freshly baked sourdough for a pre-dinner snack.
