Blue Star

These blooms are one of the truest blues you will find in the garden. The flowers of blue star, or amsonia, are clusters of small, star-shaped blossoms, borne on top of tall stems, which make perfect eye-catching centrepieces.

To create this flower…

1. Fill a piping bag with blue buttercream and hold the nozzle at a 20 degree angle with the wide end down.

2. Pipe five or six short pulled petals (see Basic Petal Strokes) that join together with a common centre.

3. Repeat the same process to pipe more flowers. To give them volume, pipe a small blob of buttercream underneath or pipe some flowers on top of the each other.

4. Using yellow buttercream in a piping bag with a small hole at the tip, pipe a small dot in the centre of each flower.

5. Pipe a stem or stems using green buttercream in a piping bag with a small hole at the tip.

6. Use a cocktail stick (toothpick) to smooth the edges of each petal when the buttercream has crusted.
