Mushrooms with Ponzu Sauce

SERVES 4–6 AS A SIDE

200 g (7 oz) fresh shiitake mushrooms

1 tablespoon vegetable oil

60 ml (2 fl oz/¼ cup) ponzu sauce (here) or ready-made ponzu sauce

sesame oil, for drizzling, optional

Remove the stems from the shiitake and discard. Cut any larger caps in half.

Heat the oil in a frying pan over medium–high heat, add the shiitake and season with salt. Cook on each side for 2 minutes, or until tender.

Transfer to a shallow bowl and immediately pour over the ponzu sauce and, if you like, drizzle with a little sesame oil.
