Ham and Black Olive Panini

PREP TIME: 5 MINUTES TOTAL TIME: 10 MINUTES MAKES 1 SERVING MUFA: BLACK OLIVE TAPENADE

Be sure to use soft sun-dried tomatoes that are not packed in oil. They are moist, bright red, and require no soaking. Look for them in the produce section of your supermarket.

2 tablespoons Black Olive Tapenade or store-bought gluten-free tapenade

2 slices gluten-free multigrain bread

¼ cup arugula

2 ounces thinly sliced gluten-free low-sodium deli ham

½ ounce thinly sliced low-sodium muenster cheese

3 sun-dried tomatoes, cut into thin strips

1. Spread the tapenade on 1 slice of bread. Top with the arugula, ham, cheese, and sun-dried tomatoes. Top with the remaining slice of bread.

2. Coat a medium nonstick skillet with cooking spray and heat over medium-high heat, or heat a panini sandwich maker according to the manufacturer’s instructions. Grill the sandwich for 4 minutes, turning once, or until the bread is well-marked and the cheese is melted. Cut in half to serve.
