Curried Cashews

Feel free to substitute pecans or walnuts, if you prefer.

2 teaspoons canola oil

1 cup unsalted dry-roasted cashews

2 teaspoons curry powder

ΒΌ teaspoon salt

Pinch of ground red pepper

In a medium skillet over medium heat, warm the oil. Add the cashews, curry powder, salt, and red pepper. Cook, stirring frequently, for 2 to 3 minutes, or until golden. Serve warm or at room temperature.
