This is a variation of the beautiful recipe as seen on the front cover of 4 Ingredients Cook 4 a Cure.
Serves 8
• 1 cup (170g) self-raising flour
• 2/3 cup (80g) desiccated coconut
• 1/2 cup (100g) sugar
• 270ml can coconut milk, shaken
Preheat the oven to 180°C. Line a 27 x 11cm loaf tin with baking paper. Pop all ingredients into the thermo bowl.

Once the batter is combined, pour it into the prepared tin, using the spatula to remove remaining batter and bake for 40 minutes or until golden and firm to touch. Remove from the oven and allow to cool on a wire rack. Serve dusted with a little icing sugar or the delicious Rosewater Buttercream.
OPTIONAL: Throw in 1/2 cup blueberries when mixing the other ingredients together, the combination of blueberries and coconut is just heavenly.
