Cheesy Frittata

This is also fabulous as a snack or a lunch with a crisp green salad.

Serves 6

• 45g Parmesan cheese, cubed

• 1 slice multigrain bread

• 2 cloves garlic

• 1 zucchini, sliced

• 3 eggs

• 1/2 cup (115g) cream

• Pinch of ground nutmeg

• 2 tablespoons pepitas

Preheat oven 180°C. Line a 20cm quiche dish with baking paper. Into the thermo bowl, place the Parmesan and bread and garlic.

Add all remaining ingredients (except pepitas) and season with sea salt and pepper.

Pour the mixture into the quiche dish. Sprinkle with pepitas. Bake for 25 minutes. Cool before slicing into wedges to serve.

OPTIONAL: Dollop with the incredibly flavoursome Quick-Fire Tomato Jam.
