Traybake Chocolate Cake

Serves 12

• 1 cup (112g) cocoa powder

• 3/4 cup (185g) boiling water

• 3/4 teaspoon bicarbonate soda

• 11/4 cups (250g) raw sugar

• 4 eggs

• 3/4 cup (180g) vegetable oil

• 1 generous cup (200g) self-raising flour

Mix the cocoa with boiling water, whisk in the bicarbonate of soda and set aside for 20 minutes to cool. Preheat oven 180°C. Line a 30 x 20cm baking tray with baking paper. Pour the sugar into the thermo bowl.

Add the eggs and oil.

Add the flour and cocoa mixture.

Pour the mixture into the prepared tray and bake for 35 minutes or until risen and firm, and an inserted skewer comes out clean. Cool before icing.

OPTIONAL: This is visually spectacular (and a whole lot naughty) topped with Dreamy Chocolate Icing and a smattering of Smarties.
