Cashew Icing

Makes 1 cup

• 1 cup (160g) raw cashews, soaked for 2 hours (reserve 2 tablespoons of water, discard the rest)

• 1 tablespoon (20g) agave nectar, or honey

• 1 teaspoon fresh lemon juice

• 1/2 teaspoon vanilla extract

• 11/2 tablespoons (25g) coconut oil

Place all the ingredients, including the reserved cashew water, into the thermo bowl.
