SALADS (SALATA) ARE ONE OF MY ABSOLUTE FAVORITE THINGS TO MAKE and eat—no surprise, since my motto is “Fresh Is Best!” With our love for seasonal produce, lean meats, and wholesome grains, Lebanese cuisine is not only absolutely delicious, it’s naturally nutritious as well. In my show and cooking classes, I’m known for my obsession with salads, from my namesake Taboulie to crunchy and refreshing Fattoush and luxurious Khyar b Laban (Cucumber, Yogurt, and Mint Salad). I have to say I’m lucky, though, with my Mama’s bountiful garden as a resource, I’m never without salad inspiration or ingredients! Unlike American salads, we Lebanese use heaps of fresh herbs in ours, and you may find yourself sneaking mint, parsley, and scallions into your crunchy greens from now on!
